Leeks

My new favorite food to cook with is leeks. I had never had them before, but thought I would experiment. After watching the Rachael Ray show I planned to make her sea bass and leeks, with salmon instead of sea bass. I had everything to make it and then realized the half and half had gone bad. We had salmon but not the leeks.

I had to find another way to cook them and found a recipe for cauliflower leek soup. While Amanda was here we made this and it came out quite tasty. The leeks gave the soup a nice onion flavor. If I ever make it again I will blend the whole thing because the cauliflower got very mushy and probably add potatoes to give it a little more texture.

Anyone else cooked with leeks and have some good suggestions on how to cook them?

I want to know how to cut leeks - can you help?

I just cut them like a green onion and then separated them so they were in little circles. I believe it is recommended to soak them in water for a little while since they can have lots of dirt on them. I did this, but the bunch I bought didn't have much dirt on them.

We have leeks growing in our backyard here in Saranac Lake, which I fully discovered about a year and a half ago. My friend Brooks and I dug a lot of them up and pickled them.
I also use them like scallions.
