Feb Freezer Cooking Day


Yesterday Emily and I (along with the help of my mom and sis) had another one of our freezer cooking days. We've done it a couple of time over the past few months and I've done some on my own too. Overall, I've really grown to appreciate having meals made ahead in the freezer since most days it seems like I'm running in circles or just exhasuted from life with small kids. Here is what we made:

Italian Chili x2
Turkey Joes x4
Chicken Cutlets x16
Tacos x3
Crockpot Barbecue x2
Farm House Chicken x4
Teriyaki Chicken x4

Overall we each ended up with 15 meals plus a couple bags of cooked chicken and cooked ground turkey. Since we had twice the hands helping this month, we were able to finish in under 4 hours! This was quite the improvement since most months it seems like we don't finish everything planned in the 8+ hours we spend on it.

This morning I had the ingredients out for pancakes so I decided to make some mixes that I'll just have to add the wet ingredients to. I've not done this before, but believe this will be a time saver in the weeks to come. I made:

pancake mix (x2)
waffle mix (x2)
cornbread mix (x2)

I also made 2 loaves of English Muffin bread (one to eat and one to freeze) and a batch of pizza dough before I ran out of yeast.

I think we're off to a good start and it's not even Feb yet!!
