I know not everyone loves Blue Cheese dressing but it is one of my favorites, especially topping buffalo chicken salad (lettuce, celery, and chicken cooked in hot wing sauce).
Blue Cheese Dressing
3/4c mayo
1 ts dried parsley
1/2 ts lemon juice
1/2 ts vinegar
1/4 c crumbled blue cheese
2 T milk (or more to get it to the consistency you like)
salt and pepper to taste
Combine all ingredients in a glass jar. Cover and shake. This is enough for 4 entree sized salads.
If you have time make it ahead and refrigerate for a couple of hours to enhance the flavor.
